What is pink gin, exactly? Historically, pink gin referred to a simple cocktail composed of London Dry Gin and a few dashes of Angostura bitters, which turned the gin a pinkish color. Today, however, there are a number of spirits on the market referred to as "pink gin"—essentially gins that have been infused with additional botanicals or fruits like grapefruit, strawberry, raspberry, rhubarb, etc. They're not necessarily sweet, but do carry some lovely floral and fruit flavors with them. Lyre's makes a non-alcoholic version, their Pink London Spirit, that we absolutely love, and Carly created this delicious cocktail to showcase its complex yet refreshing flavors.
